i made mine with a rice flour mix I am trying out. had to use approximately 1 3/4 cups flour.
cooked in Corning Ware loaf pan for 50-60 mins. turned out nicely. oh I did not add the honey, watching my sugars.

Texture is good but taste isn’t what I expected for banana bread. Not bad but not great either. Love the healthy choices in the recipe though.

Pretty good recipe... not very sweet, but great for a low-calorie snack
I made them as muffins and they were perfect at 20 minutes

The hardest part was waiting for it to cool! Awesome school holiday treat for the little ones

This turned out so great! Super moist and coconut-y! I used all the sweeteners (honey and vanilla) per the recipe and thought it turned out just right as is!

Great recipe! A little less "rough n tumble" than your typical muffin, but they do solidify more the longer they sit. I store mine in a ziploc bag in the fridge.
