These are the best! I've made these several times and it is my go-to recipe. I have a muffin pan that makes square muffins and they turn out perfect every time. (I'm sure the round would be great, too, but I just like using the squares.) If there are any that we don't eat immediately, I'll freeze the rest in a large Ziplock bag. Then, I'll just pop one or more into the microwave for 30 seconds and it's just as good as freshly baked. It makes for a nice snack or quick breakfast for the kids. I highly recommend this recipe!

Ok. So I added pumpkin pie spice, vanilla and black walnuts. And I replaced the butter with applesauce. I used Swerve brown sugar. And I made it a loaf. It was a huge hit and I’ve made it 3 or 4 times like that. Always a big hit.

Did use 1 tsp vanilla and added 1/2 cup chocolate chips.
Check at 17 minutes. Overdone. (Did use “bear” cupcake pan.)
