Ingredients

- 1/2 cup brown sugar
- 2 cups white sugar
- 1/2 cup Earth Balance (or Canola oil)
- 3 bananas (very ripe)
- 2 cups all purpose flour
- 1/2 tsp. baking powder
- 1/4 cup vanilla soy milk
- 1 tsp. apple cider vinegar
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1/2 tsp. sea salt
- 1/4 tsp. allspice
- 1/2 cup walnuts (chopped)

Directions
- Sift together the flour, baking powder, salt and spices.
- Cream together the fat and sugars. Add the bananas, soy milk and vanilla. Mix well.
- Add the wet to the dry ingredients. Spoon into muffin tin or a loaf pan.
- Bake at 350 degrees for 25 minutes if using a muffin tin or 55+ minutes if using a loaf pan.
