They turned out okay, not great but not bad either. Felt like something was missing from the recipe, just haven’t figured out what yet.

Wow these are good.
Five ingredients... one bowl. Quick prep and quick clean up. And they taste amazing. I didn't have buckwheat flour, but did have sprouted organic spelt flour, which worked well. I used the full 1/2 c of flour and added a bit of unsweetened almond milk to thin the batter to a smooth but not runny consistency. Blueberries aren't in season up here in arctic upstate NY in the dead of winter, so I used frozen blueberries. They don't need to be thawed: just dump them in and start cooking. The recipe makes five, roughly 4-5 inch fritters. This has been added to the short list of repeats. Enjoy!
