- 7 cremini mushrooms (average size, not too small, washed, and sliced. You could use any variety of mushrooms you prefer.)
- 3 Tbsp. shallot (minced French)
- 2 handfuls baby spinach (organic, washed)
- 2 Tbsp. parsley (chopped fresh organic)
- 2 beets (peeled and cut into thick slices, I used a combination of red and yellow)
- balsamic vinegar
- extra-virgin olive oil (good quality)
- 2 Tbsp. white wine (organic, optional)
- grainy mustard (old fashioned)
- crusty bread (organic, your choice)
- swiss cheese (organic grass-fed, or Emmental cheese, grated, or Daiya cheese for vegans, or no cheese)
