- 3 cloves garlic (sliced)
- 5 cms ginger (sliced)
- 1 stalk celery
- 2 spring onions (scallions, chopped in three piece)
- 1 star anise (petal)
- 1 cinnamon stick (very small)
- 1/2 tsp. sugar
- 1/2 tsp. white pepper
- 1 tsp. salt
- 500 grams extra lean minced beef (just over 1 lb, 5% fat)
- 100 grams cornflour (cornstarch)
- 3 cloves garlic (minced/pounded)
- 1 handful coriander leaves (fresh, and stalks, cilantro)
- 1 tsp. salt
- 1/2 tsp. ground white pepper
- 1/2 tsp. baking powder
- noodles (your choice, amount, see explanation above)
- 4 handfuls beansprouts
- greens
- pak choi
- sambal paste (your choice)
- red chillies (sliced up, in dark soy sauce as in the image)
- shallots (crispy, homemade or shop bought, click to read more)
