Amazing!!! I added my personal touches. I love mushrooms when I sauté with butter (add to olive oil so butter does not burn), fresh garlic (I only had garlic salt, but still worked) and white wine. also, I did not have parsley so I added dried Thyme instead. The concept is out of this world! I had it for dinner and my husband liked it too 👍👊

It was wonderful! Perfectly seasoned. Loved it! Used fresh eggs from the chicken coop, mushrooms were fresh and my husband loves lots of pepper so that was all I added. He asked for it to be on the "regulars" list.

I make this all of the time. It's delicious and can be made w any number of additions etc. I often make it w homemade tomato sauce and other veggies as well like zucchini or bok choy. Anything I have around. Garlic scapes and spring onions are particularly good. I also get better results w a fried egg rather than baking them but that could be a result of making them in my toaster over rather than the oven.

This was good, but too heavy on the mushrooms for me. I'd add onions and garlic next time I think and some fresh herbs. I love the concept of baked eggs though, the yolks turn out perfect. I sauteed the mushrooms in a castiron pan, then added the eggs on top and baked the pan to make a one-dish meal.
