I didn’t have enough mushrooms so I used some chopped asparagus. I threw them in the pan with the mushrooms at the very end and tossed them for about 1 minute. It was delicious- I will definitely make it again!

Amazing!!!
I added my personal touches. I love mushrooms when I sauté with butter (add to olive oil so butter does not burn), fresh garlic (I only had garlic salt, but still worked) and white wine. also, I did not have parsley so I added dried Thyme instead. The concept is out of this world! I had it for dinner and my husband liked it too 👍👊

I make this all of the time. It's delicious and can be made w any number of additions etc. I often make it w homemade tomato sauce and other veggies as well like zucchini or bok choy. Anything I have around. Garlic scapes and spring onions are particularly good. I also get better results w a fried egg rather than baking them but that could be a result of making them in my toaster over rather than the oven.

Thanks very much for this very simple but delicious weekend breakfast or light lunch. It makes a nice presentation for little effort as well.
