- 15 oz. cannellini beans (rinsed and drained)
- 1/4 cup capers (drained)
- 1/4 cup golden raisins
- 1 Tbsp. lemon juice (freshly squeezed, I used Meyer lemon juice)
- 1/2 tsp. Herbes de Provence
- 1 tsp. kosher salt (I used 1/2 teaspoon)
- 1/2 tsp. ground black pepper (freshly, I used 10 turns of the pepper mill)
- 1 pinch crushed red pepper flakes (or to taste)
- 1 Tbsp. extra virgin olive oil
- 4 cups baby spinach (packed fresh)
