- 1 tsp. poultry seasoning
- 1 tsp. salt
- 1/2 tsp. black pepper
- 3 1/2 Tbsp. butter (in 1 tbsp pieces)
- 1 yellow onion (large, about 2 cups chopped)
- 1 1/2 cups celery (chopped small)
- 1 cup carrots (chopped small)
- 1 large garlic clove (minced)
- 1/4 cup chopped parsley (more for garnish if preferred)
- 2 1/2 Tbsp. chopped fresh sage (or 2 ½ tsp dried)
- 1 Tbsp. chopped fresh thyme (or 1 tsp dried)
- 1 Tbsp. fresh marjoram (chopped, or 1 tsp dried)
- 2 tsp. fresh rosemary (chopped, or ½ tsp dried, crushed)
