  • 1 pound ground beef (pork, veal, sausage or turkey, any combination)
  • 1 1/2 cups onions (finely chopped)
  • 1 1/2 cups mushrooms (fresh, finely chopped)
  • 2 tablespoons garlic (minced)
  • 2 packages frozen chopped spinach
  • 16 ounces ricotta cheese (1 tub)
  • 1 cup Parmesan cheese (grated or shredded to taste)
  • 2 1/2 cups mozzarella cheese (grated or shredded to taste)
  • 2 large eggs
  • 1 tablespoon italian seasoning (dried)
  • 1 1/2 teaspoons salt
