- 1 small yellow onion (chopped)
- 1 red bell pepper (chopped)
- 2 cloves garlic (pressed or minced)
- 1 pinch salt
- 10 oz. frozen chopped spinach (preferably organic, thawed*)
- 12 oz. marinated artichokes (or 1 can, 15 ounces canned artichokes in water, drained and chopped)
- 8 oz. sour cream (or Greek yogurt)
- 2 oz. crumbled feta cheese (about ½ cup)
- 6 oz. part skim mozzarella (freshly grated, about 1 ½ cups, divided)
- 3 dashes hot sauce (your favorite, I recommend Cholula)
- freshly ground black pepper
- 1 slice toasted bread (crackers, or crisp, firm veggies)
