- 1 small onion (finely diced)
- 4 garlic cloves (minced)
- 1/4 tsp. dried oregano
- 1 lb. mild Italian sausage (casings removed and torn into small pieces or use bulk sausage)
- 28 oz. diced fire roasted tomatoes
- 24 oz. marinara (or other Meatless Pasta Sauce, use your favorite brand and variety)
- 12 oz. spaghetti (cooked to package directions for al dente and drained)
- salt (for the Pasta Water, we used kosher salt)
- 2 1/2 cups shredded mozzarella cheese
- chopped parsley (for garnish, if desired, optional)
