An easy-to-make, handheld dinner with Gilbert's Craft Sausages and avocado dipping sauce.
Ingredients

- 8 corn tortillas (homemade recipe here: https://gilbertssausages.com/recipe/aloha-sausage-taquitos)
- 4 chicken sausages (Gilbert's Aloha, sliced lengthwise)
- 1 cup Monterey Jack cheese (or Mexican)
- 1/2 cup refried beans
- salsa (to taste)
- dipping sauce (INGREDIENTS)
- 1 avocado (ripe)
- 1/3 cup yogurt (unsweetened)
- 1 Tbsp. lime juice
- 1 Tbsp. cilantro (diced)
- 1/4 tsp. salt

Directions
- Cover each tortilla with a spoonful of refried beans, 1/2 sausage (the lengthwise slice), shredded cheese, and a spoonful of salsa to taste.
- Fold over the ends of the tortilla. Brush one end with a little oil to seal it to the other.
- Turn the tortilla over on a baking sheet, and (optionally) sprinkle it with a little cheese.
- Bake for 10-15 minutes at 400 degrees, until browned and crispy.
- Dipping sauce – mash avocado with fork and combine all ingredients.
