- 2 zucchinis (medium, sliced 1/4-inch thick)
- 8 oz. baby spinach (steamed until just wilted)
- 1 1/2 cups grated mozzarella (style vegan cheese)
- vegan cheese (or use a spicy, like pepperjack)
- fresh basil leaves (Sliced, for garnish, optional)

How can people so blithely post a recipe that is so wrong? This dish is tasty enough and basically ok but the cooking time is way, way off. If you follow it closely, the zucchini won't be cooked. The quantities given won't fit into a 2 quart casserole - that should have tipped me off that something was wrong. I usually try to follow a recipe closely the first time but I ignore my better judgement too often.
