- 1 cup onion (your thinly sliced, that you already pickled in with the beets)
- 15.5 oz. chickpeas (Cans of, drained and rinsed)
- 1/2 cup liquid (from the pickled beets)
- 1 1/2 cups matzo meal
- 2 extra large eggs
- 2 Tbsp. tahini
- 1 tsp. cumin
- 1 Tbsp. coriander
- 2 cloves garlic (Minced)
- 1 handful chopped parsley (or Cilantro or a mix of both)
- 1/2 tsp. sea salt (or Kosher)
- 1/2 tsp. black pepper
- 2 cups nonfat greek yogurt
- 2 Tbsp. light mayo
- 3 inches armenian cucumber (grated, skin and seeds removed)
- 1 Tbsp. horseradish
- 2 tsp. dried dill
- 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1/2 tsp. cayenne pepper
- 1 tsp. liquid (Pickled Beet)
