- 500 grams okra (ends trimmed but without exposing the seeds)
- 1 red onion (peeled and cut into 2cm-wide wedges)
- 3 Tbsp. olive oil
- ground black pepper
- salt
- 2 cms ginger (piece, peeled and grated)
- 2 red chillies (1 deseeded and finely diced, the other cut into long, thin strips)
- 2 garlic cloves (peeled and crushed)
- 30 grams dark muscovado sugar
- 250 grams plum tomatoes (baby, cut in half lengthways)
- 1/2 coconut (small, flesh coarsely grated, you need about 100g)
- 10 grams coriander leaf (roughly chopped)
- 1 tsp. cumin seeds (toasted and lightly crushed)
- 60 grams juices
- 2 limes (skin, pith and seeds removed, flesh roughly chopped – you need)
