2nd time: Made for hubby, Keith, who loved it. I sauteed everything in artichoke oil. I also subbed 1/2 a jalepeno for the bell pepper, bleu cheese for feta, and artichokes for mushrooms. I'd made bacon in a pie pan - used the fat leftover to cook this frittata in it.
1st time: I made it healthy and used egg beaters. I also used oyster mushrooms - instead of an entire frittata, I made them into muffins - my personal egg mcmuffins. I cooked them 5 minutes longer than was called for, but they could probably go a few more minutes.
