- 5 cups cheese (coarsely grated flavorful, such as sharp cheddar or Gruyère, or a mix, see Note)
- 1/2 cup freshly grated Parmesan cheese
- 4 tsp. Dijon mustard
- 1 1/2 tsp. coarse salt (or kosher, or more to taste)
- 1/2 tsp. freshly ground black pepper (or more to taste)
- 24 oz. ziti (dried cavatelli, penne, or any short pasta)
