- 1/2 cup yogurt (full fat, not Greek)
- 3 tsp. fish sauce
- 1 Tbsp. neutral oil (such as canola)
- 3 Tbsp. neutral oil (such as canola)
- 3/4 tsp. annatto seeds (or 1/2 teaspoon paprika)
- 3/4 tsp. Sichuan peppercorns
- 1/2 star anise (broken up into individual points)
- 1 1/2 tsp. oil (chile, homemade or store bought)
- 4 Tbsp. bean sauce (chile, use less if you have punchy Sichuan dou ban jiang; more if you have milder Lee Kum Kee brand)
- 1/4 cup sweet chili sauce (purchased or homemade)
- 3 Tbsp. oyster sauce
- 2 Tbsp. rice wine vinegar (Shaoxing, dry sherry, or bourbon)
- 2 1/2 Tbsp. vinegar (chinkiang, or 1 1/2 tablespoons balsamic and 1 tablespoons cider vinegar)
- 1 1/2 tsp. sesame oil
- 2 Tbsp. neutral oil (such as canola)
- 1/2 tsp. Sichuan peppercorns (ground)
- 6 chiles
- 1/2 seeds
- 1/4 cup unsalted roasted peanuts (coarsely chopped)
- 1/2 cup Kung Pao sauce (above)
- 1/4 cup green onion (thinly sliced)
- 1/2 cup cilantro (stems, loosely packed roughly chopped, and leaves)
- 1/2 cup ranch dressing (optional)
