- 200 grams pistachio nuts
- 2 cups garbanzo beans (/chickpeas, we used canned)
- 2 cloves garlic
- 1/2 onion (small)
- 3 Tbsp. olive oil
- 1 tsp. cumin
- 1 Tbsp. flour (we used buckwheat flour)
- 1 tsp. baking powder
- 6 Tbsp. cashew butter (look for it in health stores or make it yourself)
- 6 Tbsp. canola oil
- 3 Tbsp. lemon juice
- 1 pinch salt
- 1 cup soy yoghurt (or regular if you prefer)
- 4 sprigs fresh mint (chopped)
- 1 lime juice (and zest)
- 3 tomatoes (chopped into small dices)
- 1/2 red chili (finely chopped)
- 1 clove garlic (finely chopped)
- 3 Tbsp. olive oil
- fresh oregano
- pepper
- salt
- 1 head white cabbage (or any lettuce with big leaves)
- 1 romaine lettuce
- dressing (cashew nut)
- yoghurt (mint,)
- tomato salsa
- fresh herbs
- pistachio
