Description
For this salad, goat cheese is coating in a mixture of breadcrumbs and spices before being baked. This creates a little bite that is crunchy on the outside and gooey and warm on the inside. These little cheese bites are served om top of a simple salad of lettuce and a mustard balsamic viniagrette. You can add any vegetables you want to the salad to make it more filling and nutritious.
Ingredients

- 6 slices goat cheese (approximately 1/2 cm. thick)
- 1 Tbsp. olive oil
- 3/4 cup bread crumbs (or corn flakes)
- 1 tsp. paprika
- 1 pinch tarragon (ground)
- 1 pinch ground ginger
- 3 cups lettuce (mix, finely shredded)
- 1 tsp. Dijon mustard
- 1 Tbsp. balsamic vinegar
- 2 Tbsp. olive oil
- salt and ground black pepper

Directions
- Pour the olive oil onto a plate.
- Mix the breadcrumbs with the paprika, tarragon, and ginger. Set aside.
- Dip each slice of cheese into the olive oil and then coat with the bread crumbs. Place into a baking dish. Broil until the cheese begins to melt and the bread crumbs begin to brown.
- Prepare the vinaigrette by whisking together the mustard, vinegar, oil, salt, and pepper.
- Place the lettuce onto serving plates and drizzle with vinaigrette. MIx to coat. Place the cheese on the bed of lettuce and sprinkle a little vinaigrette on top. Serve.
