Delicious! I sliced eggplant very thin for extra crunch. A bit time consuming to make but worth the effort!

It was time consuming to make because I couldn’t get my ingredients in order. Otherwise, I really loved making this dish. I love anything Martha Stewart. My son is a vegetarian and so am I but my husband loves his meat. Surprisingly he enjoyed the dish. I will make again but will add some sugar to the tomatoes to cut the bitterness. I prepared some garlic bread and a nice salad. Such a wonderful meal on a snowy day.

Make sure only use one good quality sauce and don't mix sauces or else tastes strange. I used Prego traditional sauce with Italian seasoned breadcrumbs and shredded Parmesan cheese and slice the eggplants even thinner so they get nice and crispy. Very good!

My husband was basically drooling over this meal. We have a couple of favorite Italian restaurants that we frequent, but we said we can now forget about them. I paired this with some Red Lobster cheddar biscuits. Perfection! I did swap a few spices and included GARLIC. A must in my household.

It was delicious
We will I’ll make it again I will add a few minutes to the baking of the eggplant and the baking of the overall dish

The recipe works out good. I didn’t pill it. I only baked it 20 minutes on each side before putting the sauce and the cheese. Maybe 25 is better because the skin was not really easy to eat. Very tasty and low carb.

it turned out awesome. i used italian seasoning instead of the salt, peper, oregano and other seasonings..

We really enjoyed the Eggplant Parmesan! My son and I had a nice time working together on the recipe, everyone in the family thought it was really good

This turned out amazing! The eggplant wasn’t greasy and the recipe was easy to make. This recipe is definitely a keeper!

This is the best eggplant parmigiana recipe I've ever had! Crunchy, not full of oil like the fried versions. You can taste the goodness of the eggplant.

Very good! I would bake the eggplant for only 15 per side next time. I will make this again.

This was easy to make and totally satisfied my eggplant cravings. Delicious! It does take a while, though.

My husband and I had never had eggplant and decided to venture outside our comfort zone. This recipe was easy to make and absolutely delicious!! I will be using it to impress my in-laws on their next visit!

My husband loved it. I made the homemade sauce also very tasty and easy. Alot better then my sauce. Followed the directions very easy. I will be making this again. Thanks for the recipe
