- 1/3 cup butter (softened)
- 1/2 cup sugar
- 1 large egg
- 1/2 tsp. vanilla extract
- 1/2 cup milk
- 1 1/2 cups all purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt (if using unsalted butter, increase salt to 1/2 tsp)
- 1/2 tsp. cinnamon (optional)
- 4 Tbsp. salted butter
- 3/4 cup powdered sugar
- 4 Tbsp. sugar
- 2 tsp. cinnamon

Directions
- Instructions Preheat oven to 400 degrees F. In a stand mixer, cream butter and sugar. Add egg, vanilla and milk. Put flour, baking powder, salt and cinnamon (if using) in the bowl all at once and stir with a wooden spoon, being careful not to overmix. Spoon batter into buttered mini-muffin tins, filling almost to the top. You should end up with about 18-20 mini-muffins. Bake for about 11-13 minutes, or until they just spring back when pressed and are slightly golden. Let pan cool on a wire rack for about 5 minutes, then remove muffins and let cool while you make the coating.
- Melt butter in the microwave or on the stovetop. Pour powdered sugar into a bowl. Pour cinnamon sugar into a different small bowl. When muffins are almost all the way cooled, dunk completely in butter, then roll in either powdered sugar or cinnamon sugar mixture. Place on rack to let coating firm up slightly. Enjoy!
