  • 3 pounds chicken thighs (about 5-6)
  • 2 teaspoons salt (creole, or just use salt, to salt chicken)
  • 2 teaspoons onion powder
  • 1/2 teaspoon dried thyme (or oregano)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon bouillon powder (you may replace with salt)

    I messed up when mixing the spices but it was pretty darn delicious. I had my oven on 475-500 for 18 min then did 425 for 5 min then about 30-40 min on 400 and the skin crisped up pretty nicely. I’ve also reheated it the next night in the oven and it was still juicy and crunchy. I paired it with candied yams and green beans.

    Great- I made mine a little too soicy and it wasnt that crispy but delicious nonetheless and super easy on a busy weeknight!

    I loved these! I’m a bit sissy when it comes to hot spices so I cut the cayenne back by 2/3. My family loved the crispy skin and flavorful meat.

    So good! Improvised on the spices and herbs a bit depending on what I had available. My chicken thighs were boneless, so after I turned down the heat 400 I didn’t need to bake as long; took around 20 minutes instead of 30. Will make again!

    Delicious. The skin was crispy and crunchy yet the meat stayed moist. I used ground thyme, onion & garlic powders, regular paprika and sea salt. My husband’s not a fan of chicken thighs but he really enjoyed these.

    Turned out great! Used my own seasoning this recipe is more about how to bake chicken so that it has the crunch and taste of being fried (without the oil and calories). Next time I may flip it so the bottom is crispy as well

    The seasoning was tasty. I found the heat to work well at 475 for only the first 20 minutes. 400 degrees for 30 minutes longer blackened the top of the chicken for me.

    Really delicious! I skipped the cayenne pepper since my family doesn’t like spicy food. Chicken still had lots of flavour. I especially liked the slight smoke flavour from the smoked paprika. My son told me I finally made good chicken!

    Amazing! Even for boneless, skinless chicken thighs. I placed on PAM sprayed cookie sheet with grate and cooked 15 minutes at 475, plugged in meat probe, reduced to 400, and baked until safely done (total time about 35 minutes)

    Fantastic! Some of the best ever baked. Left in the fridge for almost 24 hours and next time I will Omit cayenne even tho I halved the amount. I doubled the spice mixture too as I had 10 large thighs. So crispy!
