- 100 grams avocado
- 1/4 tsp. chipotle pepper (crushed, or your choice of dried pepper)
- 1/2 tsp. kosher salt (to taste)
- 4 slices center cut bacon
- 50 grams sweet onion (diced)
- 150 grams bell pepper (diced, I used half of two different colored peppers)
- 2 large eggs
- 6 Tbsp. liquid egg whites
- 1/2 cup colby jack cheese (Freshly Shredded, or pepper jack)
- 8 corn tortillas (Extra Thin, I used Mission)
- 1/2 cup fat free greek yogurt
- 100 grams avocado
- 1/4 tsp. chipotle pepper (Crushed, to taste)
- 1/2 tsp. kosher salt (to taste, You can play around with spices based on your flavor preference.)
