Description
Take Taco Tuesday up a notch with this super easy, parent-hack version of tacos featuring frozen beer-battered fish. While the fish is baking and getting crispy, prep your veggies and make a creamy cilantro-lime sauce. To save even more time, you can look for sliced radishes at your grocery store and buy coleslaw mix instead of shredding your own cabbage. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 18.2 oz. frozen beer-battered fish fillets (such as Gorton’s, about 10 pieces)
- 2 cups shredded red cabbage (or use store-bought coleslaw mix)
- 6 radishes (or buy 1/2 cup sliced radishes)
- 2 avocados
- 2 Tbsp. chopped fresh cilantro (plus leaves for serving)
- 1 chipotle chili in adobo sauce (or 2 chilies for more heat)
- 1 cup mayonnaise
- 1 tsp. lime zest
- 2 Tbsp. fresh lime juice
- 1/2 tsp. garlic powder
- 1/2 tsp. kosher salt
- 8 flour tortillas (fajita-size, 6 inches wide)

Directions
- Preheat oven to 425°F or as package for frozen fish directs. Cook fish according to package directions (18-20 minutes total), turning it over halfway through cooking.
- While fish cooks, cut cabbage into shreds if it’s not already shredded. Slice radishes and avocados. Chop cilantro and mince chipotle chili. In a medium bowl, stir together mayonnaise, lime zest, lime juice, chopped cilantro, chipotle chili, garlic powder, and salt. Set everything aside.
- Place tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave until warm, 30-45 seconds.
- Remove fish from the oven and cut it into bite-size pieces.
- Divide fish evenly among the tortillas. Top with cabbage, avocados, radishes, and as much sauce as you like. Sprinkle with cilantro leaves and serve with lime wedges and any remaining sauce.
