Great chocolate chip cookie recipe. The added ingredients that separates this recipe from traditional chocolate chip cookies are a pleasant surprise. It’s not too overwhelming but the espresso and cinnamon flavors really make it a fall/winter taste. I wouldn’t say this is now the go to chocolate chip cookie, but it is a change of pace option and are loved by my whole family.

Very tasty. I did make my own changes to make them a bit "healthier". I did not have baileys so I used kaluha. I snuck in a 1/2 c white wheat flour, substituted unsweetened applesauce for the butter, no white sugar, only 1/2 c brown sugar, 8 oz semi-sweet chips and 4 oz dark chips. They turned out plenty sweet and moist.

These were not what I was expecting but they were good all the same. I was hoping for a little more moist then they were but they weren't dry. I used expresso Bailey's. Would have used Bailey's chips or expresso chips but just used what I had in the house. Found them to taste like chip cookies with the taste of cinnamon and a slight taste of expresso. May make these again. Made about 2 dozen.

cookies were delicious. they were a big hit with my famiky. I couldn't find espresso powder so substituted cocoa powder.

This was fabulous! No need to refrigerate. Can smell and taste the Bailey’s. Can’t get espresso powder where I live so I doubled ground espresso coffee. Can’t say that flavour really came through. Also, I only had golden yellow sugar, not dark brown. Gonna make a lot of these!

Very yummy and easy! I love Bailey's! I used a mixture of semi sweet and milk chocolate chips and one tiny bottle of Bailey's. Next time going to try it with the salted caramel Bailey's and some sea salt.

a very tasty cookie! I didn't put them in the fridge for two hours as I wanted to make them asap and they turned out lovely still! The taste of Bailys is kind of lost with the baking but I suppose that should be expected.
