- 2 cloves garlic (minced)
- 8 medium potatoes (Yukon Golds, or other white)
- 5 cups chicken stock (or veggie stock)
- 2 tsp. Dijon mustard
- 1 dash cayenne
- salt
- pepper
- 1 cup grated cheese (such as old cheddar or Gouda)
- 1/2 cup whipping cream
- 1/2 cup milk
- 3 cups all purpose flour (sifted)
- 3 tsp. baking powder
- 1 tsp. coarse salt
- 1/4 cup sugar
- 1 Tbsp. fresh rosemary (finely chopped, or 1 tsp dry)
- 12 oz. beer (I opened it about 30 minutes before baking)
- 1/3 cup melted butter
