- 2 eggs
- 2 cups flour
- 4 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 cups buttermilk (or add 1 tsp of lemon juice to regular milk and let it sit for 5 min)
- 2 Tbsp. melted butter
- 1/4 cup green onion (chopped)
- 3/4 cup grated cheese (I used Tillamook White Cheddar - so good!)
- 8 waffles
- 8 pieces lettuce
- 4 tomato slices (large, or the equivalent)
- salt
- pepper
- 16 slices crisp bacon
- mayonnaise (or my favorite...I combine mayonnaise with some whole grain mustard; approximately 2 Tbsp of Mayo combined with 1 tsp of mustard)
- basil leaves (for garnish, optional)
