  • 1 tablespoon olive oil
  • 4 slices bacon (chopped)
  • 1 red onion (chopped)
  • 2 cloves garlic (crushed)
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon honey
  • 3 cups cooked brown rice
  • 1 cup mozzarella cheese (grated)
  • 2 eggs (lightly beaten)
  • arugula leaves (to serve)

    Directions

    1. Preheat the oven to 350°F. Lightly grease an 8-inch springform pan. Line bottom with parchment paper.
    2. Heat oil in a medium skillet on high heat. Cook bacon, onion and garlic for 3-4 mins, until lightly golden.
    3. Add sage and cook for 2 mins. Remove from heat; stir in honey. Combine rice, bacon mixture, mozzarella and eggs in a large bowl. Mix well and season to taste. Spoon mixture into prepared pan, pressing firmly.
    4. Bake for 25-30 mins, until golden and firm. Serve in wedges. Top with arugula.
