- 2 oz. butter
- 1 pinch salt
- 1 Tbsp. cinnamon (ground)
- 2 floz cognac (or brandy)
- 7 oz. sugar (granulated)
- 1 g karo syrup
- 6 floz glucose
- 8 floz 40% manufacturing cream
- 1.5 oz. butter (unsalted)
- 7 floz caramels
- 2 oz. tapioca (maltodextrin)

Directions
- Toss bacon with brown sugar (coat)
- Put bacon on silpats to bake at 325°F for 15 to 20 minutes or until golden and caramelized
- Save bacon fat for dough, strain through the china cap
