- 6 fresh basil leaves (large, medium chiffonade, not too thin or wide)
- 1 bay leaf
- 1/4 cup red wine
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. coarse ground black pepper
- 3 Tbsp. tomato paste
- 9/16 cup grated Parmesan cheese (finely, or Pecorino Romano to taste)
- 5 bratwursts (slow-grilled quality)
- 10 slices cooked bacon (5 -, not crispy)
- 5 submarine rolls (or Italian, hoagie)
- 10 Tbsp. butter (5 -, as you like)
- 15 slices provolone cheese (or as you like)
- 5 Tbsp. grated Parmesan cheese (fresh, or as you like)
