- orange zest (Grated, of 2 oranges)

- 1 cup onion (coarsely chopped, 1 medium)
- 2 cups apples (coarsely chopped, 2 medium)
- 1 cup chestnuts (peeled and coarsely chopped, about 12)

- 1 1/2 cups chicken stock (Homemade, or canned low-sodium chicken broth, skimmed of fat, plus more, if necessary)
- 1/4 cup fresh flat-leaf parsley (finely chopped)
- 30 slices smoked bacon
- 4 fresh sage leaves (torn)
- 1 tsp. fresh rosemary (leaves)
