Kids loved them! Cooked about 5 minutes longer as they weren't set in the middle and added spring onion.

Loved this recipe! Used half a russet potato and both mozzarella and American cheese in the recipe just to add a bit more flavor. Turned out great!

Super easy and great tasting. I made a couple of different types yesterday for a group of friends. i added some cheese and some onions and tomatoes to some.

I found these worked better when I put some of the egg mixture into the muffin cups, then sprinkled in the bacon. Also, I overlooked my first batch, so they were a bit dry. I added diced sautéed red bell pepper into some for extra color & flavor; I found it also helped with it being more moist.
