    Loved this recipe! Used half a russet potato and both mozzarella and American cheese in the recipe just to add a bit more flavor. Turned out great!

    Turned out more like egg pancakes- flattened once taken out of tin- but still very tasty

    I found these worked better when I put some of the egg mixture into the muffin cups, then sprinkled in the bacon. Also, I overlooked my first batch, so they were a bit dry. I added diced sautéed red bell pepper into some for extra color & flavor; I found it also helped with it being more moist.

    I'll add a bit more to it like fresh spice or something next time, but im just very sensitive to eggy flavors.
