- 1 cup extra sharp cheddar cheese (grated, or whatever hard cheese you prefer)
- 2 Tbsp. bacon grease (chilled and roughly chopped)
- 6 Tbsp. unsalted butter (diced and chilled)
- 1 large egg (extra-, kept cold)
- 1 cup buttermilk (or 1 cup milk plus 1 tablespoon white wine vinegar, shaken)
