- 20 baby potatoes (small/, about the size of ping pong balls, peeled and poked with fork/skewer)
- oil (for deep-frying the potatoes)
- 5 Tbsp. mustard oil (or any other cooking oil you want)
- asafoetida (4. a generous pinch of hing/)
- 1 indian bay leaf (tejpatta/)
- 1 tsp. cardamom powder (green, peel the cardamom and grind the seeds to a fine powder either with a mortar & pestle or spice grinder – divided)
- 1/4 tsp. clove powder (pound cloves to a powder)
- 2 1/2 Tbsp. saunf (/ fennel seed powder, divided)
- 1 tsp. ginger powder (sooth/dry)
- 3 Tbsp. Kashmiri red chili powder
- paprika
- 1/4 cup plain yogurt (well drained and whisked smooth and lump free)
- 1 Tbsp. cashew (unsalted and unroasted, or almond)
- 1/2 tsp. garam masala powder
- 1/4 tsp. cumin powder
- salt (to taste)
- 3 Tbsp. roasted cashews (+ some golden raisins for garnish, optional)
- fresh coriander (/cilantro for garnish, optional)
