Description
Babi chin is a moreish dish of pork belly slowly braised with dark soy sauce and aromatics like coriander seeds and shallots. The pork belly becomes sticky and soft, and is perfect served with heaps of white rice.

- 25 grams red chillies
- 2 Tbsp. coriander seeds
- 40 grams soybean paste (Thai)
- 600 grams pork belly (with skin on, cut into cubes)
- 80 grams dark soy sauce (preferably karamel masakan)
- 15 grams light soy sauce
- 2 1/2 tsp. granulated sugar
- 1 Tbsp. vegetable oil
- 200 grams shallots (round ones, peeled but kept whole)
- 12 grams mushrooms (cloud ear, soaked in warm water)
