Fill up for breakfast with this Brown Rice Breakfast Bowl that will fill you up with plant based protein, complex carbohydrates, and fresh fruit.

Ingredients

  • 1 cup brown rice (Short Grain)
  • 2 cups water
  • 2 cups vanilla yogurt
  • 1 tablespoon chia seeds
  • 1 tablespoon hemp hearts
  • 2 tablespoons honey (Crystals, or Honey)
  • 4 mandarin oranges
  • 1/2 cup strawberries
  • 1/2 cup blueberries

    Directions

    1. To make the rice: In a medium size saucepan, bring rice and water to a boil. Reduce heat to low and cover. Let simmer for 25 minutes, or until all liquid has absorbed. Chill in refrigerator.
    2. Chop strawberries, peel oranges, and, along with blueberries, divide into 4 bowls.
    3. Add yogurt and add chia seeds, hemp hearts, and honey crystals (or honey) on top of yogurt.
    4. Add chilled rice to bowl.
