- 1 tsp. juniper berries

- 1 cinnamon stick
- 1 dried chile

- 2 yellow onions (grated on a coarse grater)

I’ve made lamb shanks every winter for years, but this recipe out-did the lot. So many ooos and aaahs around the table tonight. I used lamb and my wine of choice was a McLaren Vale grenache. Made it a day ahead to let flavours and meat optimise. I’ll definitely be returning to this recipe.
