  • 8 slices bacon (halved)
  • 1 avocado (small, peeled, mashed)
  • 1 shallot (finely chopped)
  • 1 tablespoon lemon juice
  • 6 slices white sandwich bread
  • 2 Roma tomatoes (thinly sliced)
  • 1 ounce mixed greens

    Directions

    1. Heat a large frying pan over medium-high heat. Add bacon and cook, turning occasionally, for 5 mins, or until brown and crisp. Drain on paper towels.
    2. Combine avocado, shallot and lemon (or lime) juice. Season. Spread over 2 slices of bread. Top with bacon, tomato and mixed greens. Repeat layers, finishing with bread. Cut in half and serve immediately.
