  • 4 slices bacon (roughly chopped)
  • 2 tablespoons balsamic vinaigrette
  • 10 ounces spinach (leaf, stems removed)
  • 1 red onion (small, peeled and cut into very thin wedges)
  • 2 medium tomatoes (cut into thin wedges)

    Directions

    1. In a large skillet, over medium heat, cook bacon for 4 mins or until crisp, stirring occasionally. Using slotted spoon, remove bacon and drain on paper towels.
    2. Remove all but 2 tablespoons bacon drippings from the pan. In a skillet with bacon drippings, over medium heat, cook onion for 3 minutes stirring occasionally.
    3. Add balsamic vinaigrette, tomatoes and spinach. Cook for 1 min or until heated through and spinach just starts to wilt. Season with salt and ground black pepper. Arrange spinach, tomatoes and red onion on a serving platter. Top with bacon.
