- 3 cups ciabatta bread (or french, cut into 1” cubes)
- 4 cups romaine lettuce (torn)
- 2 tsp. EVOO
- 4 bacon slices
- 12 oz. tomatoes on the vine (cherry)
- 4 large eggs
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper (freshly)

Directions
- Preheat broiler to high.
- Arrange bread on a baking sheet. Broil 1 minute or until browned, stirring after 30 seconds. Combine bread, lettuce, and oil, toss well.
- Cook bacon in a large skillet until crisp. Remove bacon, reserving 1 tbsp drippings, crumble. Add tomatoes to drippings. Cook 3 minutes or until soft; remove. Gently break eggs into pan; cook 2 minutes.. Cover; cook 1 minute or until desired degree of doneness.
- Arrange 2 cups salad on each plate; top each with 1 egg. Sprinkle with bacon, salt and pepper.
