Even being born and bred Greek, I always look to improve on this standard fare. This is a great recipe loaded with aromas common to our culture. The kitchen was fragrant as I prepared it. I was also able to use fresh oregano, thyme and mint from the garden. Take your time with this recipe and drink a glass of the wine used for this recipe.
