This is a good weekday recipe. It comes together way faster than 65 minutes if you use canned beans. It's more like 30 minutes. Don't skimp on the queso fresco. It adds a lot to the dish. Definitely go with 2 eggs per person. It makes it more interesting. We also added some kale to give it some extra color. I'm sure spinach would be just as good.
