This recipe is delicious !! My first round of cooked bacon was cut too small and I cooked the bacon too long in the microwave (crumbled when putting on the skewers) so I learned from my mistake and cut bacon squares larger and cooked shorter in the microwave. Served with roasted parmesan potatoes on the side and fresh tomatoes from the garden with mozarella balls and drizzled balsalmic vinegrette. Absolutely perfect summer meal!!

I improvised a lot since I couldn’t find wooden skewers at the store. I used 3 chicken breasts, a whole pineapple, bacon bits, and Sweet Baby Ray’s BBQ sauce. Layered it like a casserole instead: bacon bits, pineapple chunks, marinated chicken and repeated until I used everything. Seasoned with sea salt and grounded peppercorn. Cooked in the oven at 350°F for 15mins at a time. After the first 15mins, I added more BBQ sauce on the top, then put it back in for an additional 15 minutes (before deciding to add an extra two minutes to the cook time). When it was done, I seasoned it again and served. It was juicy and tender! Even my pickiest eater at home enjoyed it. Can’t wait to try it with the skewers! :)

Perfectly crisp in all the right places. This is an easy side dish that can be made into the main one by pouring chili, shredded cheese and other toppings on top of the cooked potatoes.

These were amazing. Had to cook in oven, because a storm came through and I couldn’t grill them. My son is not a chicken fan, but he loved these. Will make again!!

We cooked these in the oven and they turned out great. Maybe cook the bacon a bit before putting it on the skewer since they could've been cooked more.

I didn't quite follow the recipe but they still turned out great. Maybe even better if I followed directions!!

It was a beautiful disaster.. Everything kept falling apart, but it was my fault; I had the heat way to high. The taste was incredible thou, will do it again with a better cooking technique that experience left me.

Absolutely brilliant and very easy to make! These will be a staple at my BBQ's this summer. I used Baby Ray's Hickory & Brown Sugar to marinade.

Simple and delicious! The only problem was the bacon sticking to the grill. Next time I may add in bell peppers for a bit mor flavor.
