Nice, will make it again. If I were to make a comparion it would taste like a simple cauliflower quiche. Neat recipe but balance could be improved by a little. For instance, add some chilipowder to spice things up a bit.

Turned out very good! Even the kids liked it 😉👍🏼 I didn't have Mexican cheese mix, so I blended some medium cheddar with mozzarella instead. Very yummy ❤️
