- 3 lb. leg of lamb (I used boneless)
- 2 Tbsp. SYD Hot Rub
- yellow mustard
- 2 Tbsp. canola oil
- 1/2 can beer (your fav, red wine, or chicken stock)
- 3 stalks diced celery
- 1 onion (chopped)
- 2 carrots (large, chopped)
- 1 sprig fresh rosemary
- 1 clove garlic (minced)
- 2 Tbsp. tomato paste
- 1 Tbsp. worcestershire sauce
- 1 cup bbq sauce (your favorite, or 1 cup brown gravy)
- 1 cup chicken stock
- 1 cup Parmesan cheese (grated)
- 1 egg (beaten)
- 3 cups mashed potatoes (your fav way, boxed potatoes, or my easy version below)
