Description
In only 30 minutes, you’ve got meal-sized baked potatoes with a barbecue twist, thanks to three quick-cooking hacks. Buy some smoky-sweet pulled pork from your favorite barbecue restaurant or grocery store. Grab a bag of coleslaw mix and add a few simple seasonings. Finally, microwave rather than bake the potatoes. They’ll come out nice and fluffy in a fraction of the oven time. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 4 russet potatoes (each about 10 oz.)
- 1/4 cup mayonnaise
- 1 Tbsp. granulated sugar
- 1 Tbsp. apple cider vinegar
- 1/4 tsp. kosher salt
- 1/4 tsp. black pepper
- 3 1/2 cups coleslaw mix (tri-color, half of a 14-oz. package)
- 1/2 lb. pulled pork (from a grocery store or take-out restaurant)
- 1/2 cup smoky barbecue sauce (divided; or a bit more or less if you prefer)
- 2 green onions (for serving)
- 2 Tbsp. salted butter

Directions
- Scrub potatoes and prick all over with a fork. Place potatoes on a microwave-safe plate and microwave on HIGH for 7 minutes. Turn potatoes over. Microwave until potatoes are tender and are easily pierced with the tip of a knife, 5-6 more minutes. Set aside and let stand 2 minutes.
- Meanwhile, in a medium bowl, whisk together mayonnaise, sugar, vinegar, salt, and pepper. Add coleslaw mix and toss to coat evenly. Let coleslaw stand while the potatoes cook. (The cabbage will soften as it stands, and the sauce will become creamier.)
- Warm pork in a microwave-safe bowl until hot, 30 seconds to 1 minute, or in a small saucepan over medium-low heat on the stovetop. Add about 1/4 cup barbecue sauce to the pork to moisten it (or a bit less if the pork is already quite saucy) and stir. Meanwhile, slice green onions and set aside.
- Cut a lengthwise slit down the centers of the potatoes. Protecting your hands from the heat, press the ends towards the center and fluff the cooked potato with a fork. Add 1/2 Tbsp. butter to each potato.
- Top potatoes evenly with pulled pork and drizzle each with about 1 Tbsp. barbecue sauce. Top with coleslaw and sprinkle with green onions.
