- lemon juice (Squeeze of)
- 100 grams dark brown sugar (soft)
- 60 grams caster sugar
- 150 mL mild olive oil (or other flavourless oil)
- 1/2 Tbsp. vanilla extract (good quality)
- 2 large eggs
- 75 grams natural yoghurt
- 225 grams plain flour (wholemeal or regular)
- 1/2 tsp. ground cinnamon
- 1 tsp. baking powder
- 1 tsp. bicarbonate of soda
- 1 pinch fine sea salt
- 100 grams unsalted butter (room temperature)
- 175 grams icing sugar
- 1/2 salted caramel (x batch of homemade sea, you can make the whole batch and just store the rest in the fridge… you know, for a rainy day)
