- 1 bunch parsley
- 1 leek (green parts)
- 3 Tbsp. virgin olive oil (extra-, or butter or ghee for non-vegan)
- 1 lb. mixed mushrooms
- shiitake
- chanterelles
- 1 shallot (large, finely chopped)
- 1 Tbsp. tomato paste
- 2 tsp. fresh thyme leaves
- 1 1/2 tsp. ground cumin
- 1 tsp. ground coriander
- 3/4 tsp. ground cinnamon
- 1 pinch ground allspice
- 5 cups homemade vegetable stock (may have to add water to equal 5 cups)
- 2 1/2 tsp. kosher salt (or more to taste)
- 1 tsp. black pepper
- 5 oz. baby spinach (washed)
